Ingredients

  • Flattened rice (chura) - 1 cup
  • Onion - 1 medium, thinly sliced
  • Green chilies - 2, slit
  • Mustard oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Peas - 1/2 cup, fresh or frozen
  • Carrot - 1 medium, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Roasted peanuts - 1/4 cup

Steps

  1. Rinse the flattened rice (chura) under cold water for a minute, then drain and set aside.
  2. In a pan, heat the mustard oil over medium heat until it shimmers.
  3. Add cumin seeds to the oil and let them splutter for a few seconds.
  4. Add the sliced onions and green chilies, sautéing until the onions turn translucent.
  5. Stir in the turmeric powder and salt, mixing well.
  6. Add the peas and grated carrot to the pan, cooking for another 3-4 minutes until the vegetables are tender.
  7. Lower the heat and gently fold in the rinsed flattened rice (chura), mixing thoroughly with the vegetables.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  9. Remove from heat and stir in chopped coriander leaves and lemon juice.
  10. Serve hot, garnished with roasted peanuts.
