- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon

- Peas - 1/2 cup, fresh or frozen
- Carrot - 1 medium, grated
- Coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Roasted peanuts - 1/4 cup
Steps
- Rinse the flattened rice (chura) under cold water for a minute, then drain and set aside.
- In a pan, heat the mustard oil over medium heat until it shimmers.
- Add cumin seeds to the oil and let them splutter for a few seconds.
- Add the sliced onions and green chilies, sautéing until the onions turn translucent.
- Stir in the turmeric powder and salt, mixing well.
- Add the peas and grated carrot to the pan, cooking for another 3-4 minutes until the vegetables are tender.
- Lower the heat and gently fold in the rinsed flattened rice (chura), mixing thoroughly with the vegetables.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Remove from heat and stir in chopped coriander leaves and lemon juice.
- Serve hot, garnished with roasted peanuts.
