- Flattened rice (chura) - 100 grams
- Tomatoes - 2 medium, chopped
- Onion - 1 small, finely chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh coriander leaves - a handful, chopped
- Salt - to taste
- Water - 500 ml
- Oil - 1 tablespoon
Steps
- In a pan, heat the oil over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds and let them crackle.
- Add the chopped onion and sauté until it turns translucent. Then, add the grated ginger, minced garlic, and slit green chili. Sauté for another 2 minutes until fragrant.
- Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and release their juices, about 5-7 minutes.
- Pour in the water and bring to a boil. Reduce heat and let it simmer for about 10 minutes to allow the flavors to meld.
- While the broth simmers, rinse the flattened rice (chura) under running water briefly and then drain. Set aside.
- Once the rasam is ready, add the rinsed flattened rice to the broth and let it cook for an additional 2-3 minutes until the chura is soft but not mushy.
- Add lemon juice and chopped coriander leaves, stir well, and adjust seasoning if necessary.
- Serve hot in bowls, garnished with additional coriander leaves if desired.
