Ingredients

  • Flattened rice (chura) - 100 grams
  • Tomatoes - 2 medium, chopped
  • Onion - 1 small, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh coriander leaves - a handful, chopped
  • Salt - to taste
  • Water - 500 ml
  • Oil - 1 tablespoon

Steps

  1. In a pan, heat the oil over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds and let them crackle.
  2. Add the chopped onion and sauté until it turns translucent. Then, add the grated ginger, minced garlic, and slit green chili. Sauté for another 2 minutes until fragrant.
  3. Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and release their juices, about 5-7 minutes.
  4. Pour in the water and bring to a boil. Reduce heat and let it simmer for about 10 minutes to allow the flavors to meld.
  5. While the broth simmers, rinse the flattened rice (chura) under running water briefly and then drain. Set aside.
  6. Once the rasam is ready, add the rinsed flattened rice to the broth and let it cook for an additional 2-3 minutes until the chura is soft but not mushy.
  7. Add lemon juice and chopped coriander leaves, stir well, and adjust seasoning if necessary.
  8. Serve hot in bowls, garnished with additional coriander leaves if desired.
