Ingredients

  • Flattened rice (chura) - 100 grams
  • Whole wheat flour (for puris) - 50 grams
  • Water - 50 ml
  • Potato - 100 grams
  • Cumin seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Oil - for frying
  • Fresh coriander leaves - for garnish

Steps

  1. Soak the flattened rice in water for about 10 minutes, then drain and set aside.
  2. Boil the potato until soft, then peel and mash it.
  3. In a pan, heat 1 teaspoon of oil, add cumin seeds, and let them splutter.
  4. Add the chopped green chili and mashed potato to the pan, season with turmeric and salt, and mix well. Cook for 2-3 minutes and set aside.
  5. In a mixing bowl, combine the whole wheat flour with a pinch of salt and enough water to form a smooth dough. Let it rest for 10 minutes.
  6. Divide the dough into small balls and roll them out into small circles (puris).
  7. Heat oil in a deep pan for frying the puris. Once hot, fry the puris until they puff up and turn golden brown, then remove and drain on paper towels.
  8. In a serving bowl, mix the soaked flattened rice with the spiced potato mixture. Garnish with fresh coriander leaves.
  9. Serve the chura alongside the hot puris.
