Ingredients
- Flattened rice (chura) - 100 grams
- Whole wheat flour (for puris) - 50 grams
- Water - 50 ml
- Potato - 100 grams
- Cumin seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Oil - for frying
- Fresh coriander leaves - for garnish
Steps
- Soak the flattened rice in water for about 10 minutes, then drain and set aside.
- Boil the potato until soft, then peel and mash it.
- In a pan, heat 1 teaspoon of oil, add cumin seeds, and let them splutter.
- Add the chopped green chili and mashed potato to the pan, season with turmeric and salt, and mix well. Cook for 2-3 minutes and set aside.
- In a mixing bowl, combine the whole wheat flour with a pinch of salt and enough water to form a smooth dough. Let it rest for 10 minutes.
- Divide the dough into small balls and roll them out into small circles (puris).
- Heat oil in a deep pan for frying the puris. Once hot, fry the puris until they puff up and turn golden brown, then remove and drain on paper towels.
- In a serving bowl, mix the soaked flattened rice with the spiced potato mixture. Garnish with fresh coriander leaves.
- Serve the chura alongside the hot puris.
