- Prawns - 250 grams, cleaned and deveined
- Flattened rice (Chura) - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Coconut milk - 100 ml
- Oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - a handful, chopped for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chili. Cook for 2 minutes until fragrant.
- Add the chopped tomatoes and cook until they soften and blend into the mixture.
- Mix in the turmeric powder, red chili powder, and coriander powder. Cook for another 2 minutes.
- Add the cleaned prawns to the pan, stirring well to coat them with the spices. Cook for 5-7 minutes until the prawns turn pink.
- Pour in the coconut milk and sprinkle in the garam masala. Simmer for 5 minutes, allowing the flavors to meld.
- In a separate bowl, soak the flattened rice in warm water for 5 minutes, then drain.
- Serve the prawn curry over a bed of chura, garnished with fresh coriander leaves.
