Ingredients

  • Prawns - 250 grams, cleaned and deveined
  • Flattened rice (Chura) - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut milk - 100 ml
  • Oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - a handful, chopped for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger-garlic paste and green chili. Cook for 2 minutes until fragrant.
  4. Add the chopped tomatoes and cook until they soften and blend into the mixture.
  5. Mix in the turmeric powder, red chili powder, and coriander powder. Cook for another 2 minutes.
  6. Add the cleaned prawns to the pan, stirring well to coat them with the spices. Cook for 5-7 minutes until the prawns turn pink.
  7. Pour in the coconut milk and sprinkle in the garam masala. Simmer for 5 minutes, allowing the flavors to meld.
  8. In a separate bowl, soak the flattened rice in warm water for 5 minutes, then drain.
  9. Serve the prawn curry over a bed of chura, garnished with fresh coriander leaves.
