- Flattened rice (Chura) - 1 cup (100g)
- Pesarattu (green gram dosa) batter - 1 cup (250g)
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Carrot - 1 small, grated
- Curry leaves - 8-10 leaves
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Oil - 1 tablespoon
- Salt - to taste
- Fresh coriander - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the flattened rice in water and soak it for about 10 minutes, then drain and set aside.
- In a pan, heat oil over medium heat and add mustard seeds and cumin seeds. Once they start to splutter, add curry leaves.
- Add chopped onions, green chili, and ginger. Sauté until the onions are translucent.
- Stir in the grated carrot and cook for another 2-3 minutes until slightly softened.
- Add the soaked and drained flattened rice to the pan, mixing well with the sautéed vegetables.
- Pour in the pesarattu batter over the mixture and gently stir to combine. Cook for about 5-7 minutes until everything is heated through.
- Season with salt to taste and sprinkle with fresh coriander and lemon juice before serving.
