Ingredients

  • Flattened rice (Chura) - 1 cup (100g)
  • Pesarattu (green gram dosa) batter - 1 cup (250g)
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 small, grated
  • Curry leaves - 8-10 leaves
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Oil - 1 tablespoon
  • Salt - to taste
  • Fresh coriander - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the flattened rice in water and soak it for about 10 minutes, then drain and set aside.
  2. In a pan, heat oil over medium heat and add mustard seeds and cumin seeds. Once they start to splutter, add curry leaves.
  3. Add chopped onions, green chili, and ginger. Sauté until the onions are translucent.
  4. Stir in the grated carrot and cook for another 2-3 minutes until slightly softened.
  5. Add the soaked and drained flattened rice to the pan, mixing well with the sautéed vegetables.
  6. Pour in the pesarattu batter over the mixture and gently stir to combine. Cook for about 5-7 minutes until everything is heated through.
  7. Season with salt to taste and sprinkle with fresh coriander and lemon juice before serving.
