- Flattened rice (chura) - 1 cup
- Rice flour - 1/2 cup
- Potato (boiled and mashed) - 1 medium
- Onion (finely chopped) - 1 small
- Green chili (finely chopped) - 1 small
- Coriander leaves (chopped) - 2 tablespoons
- Cumin seeds - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Oil (for frying) - 2 tablespoons
Steps
- Soak the flattened rice in warm water for about 10 minutes until it softens, then drain and set aside.
- In a mixing bowl, combine the softened flattened rice, rice flour, boiled and mashed potato, chopped onion, green chili, coriander leaves, cumin seeds, salt, and turmeric powder. Mix well until a dough-like consistency forms.
- Divide the mixture into two equal portions and shape each portion into a flat disc.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of oil.
- Place one disc on the skillet and cook for 3-4 minutes or until golden brown, flipping occasionally. Add more oil if needed.
- Repeat the process for the second disc.
- Once both parathas are cooked, serve hot with yogurt or pickles.
