Ingredients

  • Flattened rice (chura) - 1 cup
  • Rice flour - 1/2 cup
  • Potato (boiled and mashed) - 1 medium
  • Onion (finely chopped) - 1 small
  • Green chili (finely chopped) - 1 small
  • Coriander leaves (chopped) - 2 tablespoons
  • Cumin seeds - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Oil (for frying) - 2 tablespoons

Steps

  1. Soak the flattened rice in warm water for about 10 minutes until it softens, then drain and set aside.
  2. In a mixing bowl, combine the softened flattened rice, rice flour, boiled and mashed potato, chopped onion, green chili, coriander leaves, cumin seeds, salt, and turmeric powder. Mix well until a dough-like consistency forms.
  3. Divide the mixture into two equal portions and shape each portion into a flat disc.
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon of oil.
  5. Place one disc on the skillet and cook for 3-4 minutes or until golden brown, flipping occasionally. Add more oil if needed.
  6. Repeat the process for the second disc.
  7. Once both parathas are cooked, serve hot with yogurt or pickles.
