- Ginger-Garlic paste - 1 tablespoon
- Yogurt - 100 grams
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cinnamon stick - 1 inch
- Cloves - 3
- Cardamom pods - 2
- Salt - to taste
- Oil (preferably mustard oil) - 2 tablespoons
- Water - 1 cup
- Chura (flattened rice) - 100 grams
- Fresh coriander leaves (for garnish) - 2 tablespoons
Steps
- Heat the mustard oil in a heavy-bottomed pot over medium heat until it reaches smoking point. Reduce the heat and add cumin seeds, cinnamon stick, cloves, and cardamom pods, sautéing for 30 seconds.
- Add the finely sliced onions and cook until they turn golden brown, stirring frequently to avoid burning.
- Stir in the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
- Add the mutton pieces to the pot, increasing the heat to medium-high. Brown the mutton on all sides for about 5-7 minutes.
- Lower the heat and mix in the yogurt, red chili powder, turmeric powder, coriander powder, and salt. Cook for 10 minutes, stirring occasionally.
- Pour in the water, bring the mixture to a boil, then cover and simmer on low heat for about 40 minutes, or until the mutton is tender.
- Once the mutton is cooked, stir in the garam masala and cook for an additional 5 minutes uncovered to enhance the flavor.
- While the mutton is cooking, in a separate pan, lightly toast the chura (flattened rice) over low heat until it is crisp.
- Serve the mutton rogan josh hot over a bed of crispy chura, garnished with fresh coriander leaves.
