  • Onion - 1 medium, finely sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Coconut milk - 100 ml
  • Cooking oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish
  • Chura (flattened rice) - 100 grams, for serving

Steps

  1. Heat the cooking oil in a pan over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
  2. Add the minced garlic, grated ginger, and slit green chili to the pan, cooking for an additional 2 minutes until fragrant.
  3. Stir in the diced chicken and cook for about 5-6 minutes until the chicken is browned on all sides.
  4. Add turmeric powder, red chili powder, and salt. Mix well to coat the chicken with the spices.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for 10 minutes until the chicken is cooked through and tender.
  6. Add the chopped methi leaves and stir well. Cook for another 2-3 minutes until the methi is wilted and mixed in.
  7. Remove from heat and garnish with fresh coriander.
  8. Serve the creamy chicken over a bed of chura (flattened rice) for a delightful midnight meal.
