  • Ginger - 1 teaspoon, grated
  • Mustard oil - 1 tablespoon
  • Fresh coriander leaves - a handful, chopped

Steps

  1. In a large pot, bring 500 ml of water to a boil. Add salt, cumin seeds, chopped green chili, and grated ginger to the boiling water.
  2. Gradually add the rice flour to the boiling water while stirring continuously to avoid lumps.
  3. Cook the mixture on low heat, stirring constantly until it thickens and forms a dough-like consistency, about 5-7 minutes.
  4. Remove from heat and let it cool slightly. Once cool enough to handle, knead the dough lightly.
  5. Form the khichu into small rounds or flat discs and place them on a plate.
  6. Drizzle mustard oil over the khichu and garnish with chopped coriander leaves before serving.
