Steps
- In a large pot, bring 500 ml of water to a boil. Add salt, cumin seeds, chopped green chili, and grated ginger to the boiling water.
- Gradually add the rice flour to the boiling water while stirring continuously to avoid lumps.
- Cook the mixture on low heat, stirring constantly until it thickens and forms a dough-like consistency, about 5-7 minutes.
- Remove from heat and let it cool slightly. Once cool enough to handle, knead the dough lightly.
- Form the khichu into small rounds or flat discs and place them on a plate.
- Drizzle mustard oil over the khichu and garnish with chopped coriander leaves before serving.
