- Flattened rice (chura) - 100 grams
- Mustard oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Green chili (slit) - 1
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Coriander leaves (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Boiled potato (diced) - 1 medium
- Peas (fresh or frozen) - 50 grams
- Cumin seeds - 1/2 teaspoon
Steps
- 1. Rinse the flattened rice (chura) in water and soak it for 5 minutes. Drain and set aside.
- 2. In a pan, heat the mustard oil over medium heat until it shimmers.
- 3. Add cumin seeds and let them splutter, then add the chopped onions and green chili. Sauté until the onions turn translucent.
- 4. Stir in the turmeric powder and salt, followed by the boiled potatoes and peas. Cook for 3-4 minutes until heated through.
- 5. Add the soaked and drained flattened rice to the pan. Mix well to combine all ingredients and cook for another 2-3 minutes.
- 6. Remove from heat and add lemon juice and chopped coriander leaves. Mix gently.
- 7. Serve warm, garnished with additional coriander if desired.
