- Flattened rice (Chura) - 100 grams
- Mustard oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Green chilies - 2, chopped
- Ginger - 1 inch, grated
- Onion - 1 medium, finely chopped
- Potato - 1 small, diced
- Peas - 50 grams, fresh or frozen
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- In a bowl, soak the flattened rice (Chura) in water for about 5 minutes, then drain and set aside.
- Heat mustard oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped green chilies and grated ginger to the pan, sautéing for about 1 minute until fragrant.
- Add the finely chopped onion and sauté until it turns translucent.
- Incorporate the diced potato and peas into the mixture, along with turmeric powder and salt. Stir well and cover the pan.
- Cook for about 5-7 minutes until the potatoes are tender, stirring occasionally.
- Once the potatoes are cooked, add the soaked and drained flattened rice to the pan. Mix everything well and cook for another 2-3 minutes to combine the flavors.
- Garnish with fresh coriander leaves before serving.
