Ingredients
- Flattened rice (chura) - 1 cup
- Gram flour (besan) - 1/4 cup
- Yogurt - 1/2 cup
- Mustard seeds - 1 tsp
- Cumin seeds - 1/2 tsp
- Green chilies - 1-2 (finely chopped)
- Turmeric powder - 1/4 tsp
- Salt - to taste
- Coriander leaves - 2 tbsp (chopped)
- Coconut (grated) - 1/4 cup
- Oil - 2 tbsp
Steps
- In a mixing bowl, soak the flattened rice (chura) in water for about 10 minutes and then drain the excess water.
- In another bowl, combine gram flour, turmeric powder, and salt. Gradually add water to this mixture to form a smooth batter.
- In a pan, heat 1 tbsp of oil and add mustard seeds and cumin seeds. Once they start to splutter, add chopped green chilies and sauté for a minute.
- Add the gram flour batter to the pan and cook on low heat, stirring continuously until it thickens and leaves the sides of the pan (around 5-7 minutes).
- Spread the cooked gram flour mixture evenly on a greased plate and let it cool for a few minutes.
- Once cooled, cut the gram flour mixture into strips and roll them up gently.
- In a serving bowl, mix the soaked flattened rice with yogurt, grated coconut, and chopped coriander leaves. Add salt to taste.
- Top the flattened rice mixture with the rolled gram flour khandvi and drizzle with the remaining oil.
