Ingredients

  • Flattened rice (chura) - 1 cup
  • Gram flour (besan) - 1/4 cup
  • Yogurt - 1/2 cup
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Green chilies - 1-2 (finely chopped)
  • Turmeric powder - 1/4 tsp
  • Salt - to taste
  • Coriander leaves - 2 tbsp (chopped)
  • Coconut (grated) - 1/4 cup
  • Oil - 2 tbsp

Steps

  1. In a mixing bowl, soak the flattened rice (chura) in water for about 10 minutes and then drain the excess water.
  2. In another bowl, combine gram flour, turmeric powder, and salt. Gradually add water to this mixture to form a smooth batter.
  3. In a pan, heat 1 tbsp of oil and add mustard seeds and cumin seeds. Once they start to splutter, add chopped green chilies and sauté for a minute.
  4. Add the gram flour batter to the pan and cook on low heat, stirring continuously until it thickens and leaves the sides of the pan (around 5-7 minutes).
  5. Spread the cooked gram flour mixture evenly on a greased plate and let it cool for a few minutes.
  6. Once cooled, cut the gram flour mixture into strips and roll them up gently.
  7. In a serving bowl, mix the soaked flattened rice with yogurt, grated coconut, and chopped coriander leaves. Add salt to taste.
  8. Top the flattened rice mixture with the rolled gram flour khandvi and drizzle with the remaining oil.
