- Bitter gourd (Karela) - 150 grams
- Onion - 1 medium, thinly sliced
- Green chili - 1, finely chopped
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Wash the bitter gourd thoroughly, slice it in half lengthwise, and remove the seeds. Cut into thin slices and sprinkle with salt; set aside for 10 minutes to draw out excess moisture.
- In a pan, heat the mustard oil over medium heat. Add the cumin seeds and allow them to splutter.
- Add the sliced onions and green chili to the pan, sautéing until the onions turn golden brown.
- Rinse the salted bitter gourd slices under running water to remove excess salt and bitterness, then add them to the pan. Stir in the turmeric powder.
- Cook the bitter gourd for about 5-7 minutes, stirring occasionally until they are slightly soft.
- Add the flattened rice (Chura) to the pan, mix well, and cook for another 5 minutes, allowing the flavors to meld together.
- Garnish with fresh coriander leaves before serving.
