Ingredients

  • Flattened rice (Chura) - 100 grams
  • Bitter gourd (Karela) - 150 grams
  • Onion - 1 medium, thinly sliced
  • Green chili - 1, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the bitter gourd thoroughly, slice it in half lengthwise, and remove the seeds. Cut into thin slices and sprinkle with salt; set aside for 10 minutes to draw out excess moisture.
  2. In a pan, heat the mustard oil over medium heat. Add the cumin seeds and allow them to splutter.
  3. Add the sliced onions and green chili to the pan, sautéing until the onions turn golden brown.
  4. Rinse the salted bitter gourd slices under running water to remove excess salt and bitterness, then add them to the pan. Stir in the turmeric powder.
  5. Cook the bitter gourd for about 5-7 minutes, stirring occasionally until they are slightly soft.
  6. Add the flattened rice (Chura) to the pan, mix well, and cook for another 5 minutes, allowing the flavors to meld together.
  7. Garnish with fresh coriander leaves before serving.
