Ingredients

  • Flattened rice (Chura) - 100 grams
  • Paneer (cottage cheese) - 150 grams, cubed

  • Tomato - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the mustard oil in a kadai or frying pan over medium heat until smoking, then reduce to medium-low.
  2. Add cumin seeds and let them splutter for a few seconds.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the ginger and garlic, cooking for another minute until fragrant.
  5. Add the chopped tomatoes and cook until soft, about 3-4 minutes.
  6. Sprinkle in turmeric powder, red chili powder, and salt; mix well to combine.
  7. Add the cubed paneer and green chili, gently mixing until the paneer is coated with the spices and heated through, about 2-3 minutes.
  8. Meanwhile, rinse the flattened rice under cold water to soften it, then drain well.
  9. Add the softened flattened rice to the paneer mixture, stirring gently to combine, and cook for an additional 2 minutes until heated through.
  10. Garnish with fresh coriander leaves and serve hot.
