Ingredients

  • Flattened rice (Chura) - 100 grams
  • Cauliflower - 200 grams, finely chopped

  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Mustard oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped

Steps

  1. Rinse the flattened rice (Chura) in water and drain it, allowing it to soften for about 5 minutes.
  2. Heat mustard oil in a pan over medium heat. Add cumin seeds and let them crackle.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Stir in the grated ginger and chopped green chili, cooking for another minute.
  5. Add the finely chopped cauliflower and sprinkle turmeric powder and salt. Mix well and cover the pan, cooking for about 8-10 minutes until the cauliflower is tender.
  6. Once the cauliflower is cooked, add the softened flattened rice to the pan. Mix gently to combine all the ingredients.
  7. Cook for an additional 2-3 minutes, stirring occasionally, to allow the flavors to meld.
  8. Garnish with chopped fresh coriander leaves before serving.
