Ingredients

  • Boiled Potatoes (medium) - 3
  • Flattened Rice (Chura) - 1 cup
  • Mustard Oil - 2 tablespoons
  • Cumin Seeds - 1 teaspoon
  • Asafoetida (Hing) - a pinch
  • Turmeric Powder - 1/2 teaspoon
  • Red Chili Powder - 1 teaspoon
  • Salt - to taste
  • Fresh Coriander Leaves (chopped) - 2 tablespoons
  • Green Chilies (finely chopped) - 1
  • Ginger (grated) - 1 teaspoon
  • Lemon Juice - 1 tablespoon

Steps

  1. Peel and mash the boiled potatoes in a bowl until smooth.
  2. In a pan, heat mustard oil over medium heat and add cumin seeds, allowing them to splutter.
  3. Add a pinch of asafoetida, followed by grated ginger and chopped green chilies. Sauté for a minute.
  4. Add the mashed potatoes to the pan along with turmeric powder, red chili powder, and salt. Mix well and cook for 5 minutes, stirring occasionally.
  5. Remove from heat and let the potato mixture cool slightly. Once cooled, form small dumplings from the mixture.
  6. In a separate bowl, soak the flattened rice (Chura) in water for 2-3 minutes until slightly softened, then drain.
  7. In a serving dish, layer the soaked Chura and top it with the prepared dumplings.
  8. Drizzle lemon juice and garnish with chopped coriander leaves before serving.
