Ingredients

  • Flattened rice (chura) - 100 grams
  • Yogurt - 50 grams
  • Water - 100 ml
  • Chickpea flour (besan) - 30 grams
  • Turmeric powder - 1/4 teaspoon
  • Baking soda - 1/2 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Oil - 1 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 6-8 leaves
  • Fresh coriander - for garnish

Steps

  1. In a mixing bowl, soak the flattened rice in water for about 10 minutes until soft, then drain excess water.
  2. Add yogurt, chickpea flour, turmeric powder, baking soda, chopped green chili, grated ginger, and salt to the softened chura.
  3. Mix well to form a smooth batter, adding a little water if necessary to achieve a pourable consistency.
  4. Grease a steaming tray or a shallow dish with oil and pour the batter into it.
  5. Prepare a steamer or a large pot with water, bringing it to a boil. Place the tray into the steamer and cover it.
  6. Steam the dhokla for 15-20 minutes until it is firm and a toothpick inserted comes out clean.
  7. In a small pan, heat oil and add mustard seeds. Once they splutter, add curry leaves and sauté for a few seconds.
  8. Pour this tempering over the steamed dhokla evenly.
  9. Garnish with fresh coriander before serving and cut into squares.
