Ingredients

  • Flattened rice (chura) - 100 grams
  • Plain yogurt - 200 grams
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped (adjust to taste)
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Coriander leaves - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Oil - 1 tablespoon

Steps

  1. Rinse the flattened rice under cold water in a fine sieve until it softens slightly, then drain and set aside.
  2. In a mixing bowl, combine the softened flattened rice with yogurt, diced cucumber, diced tomato, chopped onion, green chili, lemon juice, and salt. Mix well.
  3. In a small pan, heat oil over medium heat. Add mustard seeds and cumin seeds, allowing them to crackle.
  4. Once the seeds start popping, add turmeric powder and quickly pour the tempered spices over the yogurt and rice mixture.
  5. Fold in the chopped coriander leaves and adjust seasoning if necessary.
  6. Serve immediately, garnished with extra coriander or vegetables if desired.
