- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped (adjust to taste)
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Coriander leaves - a handful, chopped
- Lemon juice - 1 tablespoon
- Oil - 1 tablespoon
Steps
- Rinse the flattened rice under cold water in a fine sieve until it softens slightly, then drain and set aside.
- In a mixing bowl, combine the softened flattened rice with yogurt, diced cucumber, diced tomato, chopped onion, green chili, lemon juice, and salt. Mix well.
- In a small pan, heat oil over medium heat. Add mustard seeds and cumin seeds, allowing them to crackle.
- Once the seeds start popping, add turmeric powder and quickly pour the tempered spices over the yogurt and rice mixture.
- Fold in the chopped coriander leaves and adjust seasoning if necessary.
- Serve immediately, garnished with extra coriander or vegetables if desired.
