- Fresh chhena (cottage cheese) - 200 grams
- Sugar - 30 grams
- Cardamom powder - 1/4 teaspoon
- Ghee (clarified butter) - 2 tablespoons
- Milk - 50 ml
- Chopped nuts (cashews, almonds) - 2 tablespoons
- Raisins - 1 tablespoon
- Salt - a pinch
Steps
- In a mixing bowl, soak the flattened rice in water for 5 minutes, then drain and set aside.
- In another bowl, crumble the fresh chhena and mix it with sugar, cardamom powder, and a pinch of salt until well combined.
- Add the soaked flattened rice to the chhena mixture and pour in the milk. Mix until the ingredients are evenly combined.
- In a non-stick pan, heat ghee over medium heat. Add the chopped nuts and raisins, sautéing until the nuts are golden brown.
- Pour the chura and chhena mixture into the pan, spreading it evenly. Cook for about 10-12 minutes on low heat, occasionally stirring to prevent sticking.
- Once it is cooked and slightly browned at the bottom, turn off the heat and let it cool for a few minutes.
- Serve warm, garnished with extra chopped nuts if desired.
