Ingredients

  • Flattened rice (chura) - 100 grams
  • Fresh chhena (cottage cheese) - 200 grams
  • Sugar - 30 grams
  • Cardamom powder - 1/4 teaspoon
  • Ghee (clarified butter) - 2 tablespoons
  • Milk - 50 ml
  • Chopped nuts (cashews, almonds) - 2 tablespoons
  • Raisins - 1 tablespoon
  • Salt - a pinch

Steps

  1. In a mixing bowl, soak the flattened rice in water for 5 minutes, then drain and set aside.
  2. In another bowl, crumble the fresh chhena and mix it with sugar, cardamom powder, and a pinch of salt until well combined.
  3. Add the soaked flattened rice to the chhena mixture and pour in the milk. Mix until the ingredients are evenly combined.
  4. In a non-stick pan, heat ghee over medium heat. Add the chopped nuts and raisins, sautéing until the nuts are golden brown.
  5. Pour the chura and chhena mixture into the pan, spreading it evenly. Cook for about 10-12 minutes on low heat, occasionally stirring to prevent sticking.
  6. Once it is cooked and slightly browned at the bottom, turn off the heat and let it cool for a few minutes.
  7. Serve warm, garnished with extra chopped nuts if desired.
