Steps

  1. Soak the flattened rice in water for 5 minutes, then drain and set aside.

  3. Add ginger-garlic paste and slit green chilies, sautéing for another minute until fragrant.

  5. Introduce the chicken thighs to the pan, stirring to coat them in the spice mixture. Cook for about 10-12 minutes until the chicken is fully cooked and tender.
  6. Add the grated coconut and curry leaves to the chicken, mixing well. Cook for an additional 2-3 minutes.
  7. In a large bowl, combine the soaked flattened rice with the chicken mixture, mixing gently to incorporate.
  8. Serve hot, garnished with chopped coriander leaves.
