Ingredients

  • Chura (flattened rice) - 100g
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, thinly sliced
  • Ginger-garlic paste - 1 teaspoon
  • Green chilies - 2, slit
  • Mixed vegetables (carrots, peas, and beans) - 100g
  • Basmati rice - 50g, soaked for 30 minutes
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Water - 300ml

Steps

  1. Heat the vegetable oil in a pan over medium heat and add the sliced onions. Sauté until golden brown.
  2. Add the ginger-garlic paste and slit green chilies, cooking for another minute until fragrant.
  3. Stir in the mixed vegetables and cook for 5-7 minutes until they are tender.
  4. Add the soaked basmati rice, turmeric powder, red chili powder, garam masala, and salt. Mix well.
  5. Pour in the water and bring the mixture to a boil. Then lower the heat, cover the pan, and simmer for 10 minutes until the rice is cooked and the water is absorbed.
  6. In a separate bowl, soak the chura in water for 2-3 minutes, then drain and lightly squeeze out excess water.
  7. Once the rice is cooked, gently fold in the soaked chura, chopped coriander, and lemon juice. Mix carefully to avoid breaking the rice.
  8. Cover and let it sit for 5 minutes on low heat, allowing flavors to meld.
  9. Serve hot, garnished with additional coriander if desired.
