Ingredients
- Chura (flattened rice) - 100g
- Vegetable oil - 2 tablespoons
- Onion - 1 medium, thinly sliced
- Ginger-garlic paste - 1 teaspoon
- Green chilies - 2, slit
- Mixed vegetables (carrots, peas, and beans) - 100g
- Basmati rice - 50g, soaked for 30 minutes
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 300ml
Steps
- Heat the vegetable oil in a pan over medium heat and add the sliced onions. Sauté until golden brown.
- Add the ginger-garlic paste and slit green chilies, cooking for another minute until fragrant.
- Stir in the mixed vegetables and cook for 5-7 minutes until they are tender.
- Add the soaked basmati rice, turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Pour in the water and bring the mixture to a boil. Then lower the heat, cover the pan, and simmer for 10 minutes until the rice is cooked and the water is absorbed.
- In a separate bowl, soak the chura in water for 2-3 minutes, then drain and lightly squeeze out excess water.
- Once the rice is cooked, gently fold in the soaked chura, chopped coriander, and lemon juice. Mix carefully to avoid breaking the rice.
- Cover and let it sit for 5 minutes on low heat, allowing flavors to meld.
- Serve hot, garnished with additional coriander if desired.
