Ingredients

  • Flattened rice (chura) - 100 grams
  • Jaggery (grated) - 50 grams
  • Coconut (grated) - 30 grams
  • Ginger (grated) - 1 teaspoon
  • Cardamom powder - 1/4 teaspoon
  • Water - 50 ml
  • Rice flour - 100 grams
  • Sesame seeds - 1 tablespoon
  • Ghee (clarified butter) - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a bowl, soak the flattened rice in water for about 10 minutes, then drain and set aside.
  2. In a pan, melt the jaggery with 50 ml of water over low heat until it dissolves completely.
  3. Add the grated coconut, ginger, and cardamom powder to the jaggery syrup, mixing well. Cook for another 2-3 minutes until the mixture thickens.
  4. In another bowl, mix the rice flour, sesame seeds, and a pinch of salt. Gradually add the jaggery-coconut mixture to the flour, kneading until a dough forms.
  5. Divide the dough into small balls and flatten them into discs about 1/2 cm thick.
  6. Heat ghee in a pan and shallow fry the discs on medium heat until golden brown on both sides, about 3-4 minutes per side.
  7. Remove the fried discs and place them on a paper towel to absorb excess ghee.
  8. Serve the flattened rice topped with a drizzle of jaggery syrup and the freshly made Thekua on the side.
