Ingredients
- Flattened rice (chura) - 100 grams
- Jaggery (grated) - 50 grams
- Coconut (grated) - 30 grams
- Ginger (grated) - 1 teaspoon
- Cardamom powder - 1/4 teaspoon
- Water - 50 ml
- Rice flour - 100 grams
- Sesame seeds - 1 tablespoon
- Ghee (clarified butter) - 2 tablespoons
- Salt - a pinch
Steps
- In a bowl, soak the flattened rice in water for about 10 minutes, then drain and set aside.
- In a pan, melt the jaggery with 50 ml of water over low heat until it dissolves completely.
- Add the grated coconut, ginger, and cardamom powder to the jaggery syrup, mixing well. Cook for another 2-3 minutes until the mixture thickens.
- In another bowl, mix the rice flour, sesame seeds, and a pinch of salt. Gradually add the jaggery-coconut mixture to the flour, kneading until a dough forms.
- Divide the dough into small balls and flatten them into discs about 1/2 cm thick.
- Heat ghee in a pan and shallow fry the discs on medium heat until golden brown on both sides, about 3-4 minutes per side.
- Remove the fried discs and place them on a paper towel to absorb excess ghee.
- Serve the flattened rice topped with a drizzle of jaggery syrup and the freshly made Thekua on the side.
