- Flattened rice (chura) - 1 cup
- Split yellow lentils (moong dal) - 1/4 cup
- Water - 1/2 cup (for soaking lentils)
- Vegetable oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Green chilies - 1-2, finely chopped
- Onion - 1 small, finely chopped
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - a handful, chopped
Steps
- Soak the split yellow lentils in water for at least 30 minutes and then drain.
- In a pan, heat vegetable oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add the finely chopped onions and sauté until they are golden brown.
- Stir in the grated ginger and chopped green chilies, and sauté for another minute.
- Add the soaked lentils, turmeric powder, and salt. Cook for about 5-7 minutes until the lentils are cooked through.
- In a large bowl, mix the flattened rice with the cooked lentil mixture. Ensure the chura is well coated with the spices.
- Cook the mixture on low heat for about 5 minutes, stirring occasionally to prevent sticking.
- Garnish with fresh chopped coriander leaves before serving.
