Ingredients
- Flattened rice (chura) - 100 grams
- Whole wheat flour - 150 grams
- Ghee - 2 tablespoons
- Baked potatoes - 2 medium
- Roasted eggplant (baingan) - 1 medium
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Salt - to taste
- Water - as needed
Steps
- In a bowl, mix whole wheat flour, salt, and 1 tablespoon of ghee. Gradually add water to form a soft dough. Cover and let it rest for 15 minutes.
- For the chokha, peel and mash the baked potatoes and roasted eggplant in a bowl. Add chopped onion, green chili, cumin powder, chopped coriander leaves, and salt. Mix well to combine.
- Divide the dough into equal portions and flatten each portion into a circle. Place a spoonful of the chokha filling in the center and fold the edges over to form a ball. Pinch to seal and shape into smooth balls.
- Heat ghee in a pan over medium heat and gently place the littis in the pan. Cook until golden brown on all sides. Alternatively, you can bake them in a preheated oven at 180°C for 25-30 minutes.
- Meanwhile, rinse the flattened rice (chura) in water to soften it. Drain and set aside.
- Once the littis are done, serve them hot with the chura on the side. You can drizzle some ghee over the chura for added flavor.
