Ingredients

  • Flattened rice (chura) - 100 grams
  • Full-fat milk - 500 ml
  • Jaggery - 50 grams (grated)
  • Cardamom powder - 1/4 teaspoon
  • Chopped nuts (almonds and cashews) - 2 tablespoons
  • Raisins - 1 tablespoon
  • Ghee - 1 tablespoon
  • Saffron strands - a pinch

Steps

  1. In a pan, heat the ghee on low flame, then add the chopped nuts and raisins, sautéing until golden. Remove from the pan and set aside.
  2. In the same pan, add the full-fat milk and bring it to a boil, stirring occasionally.
  3. Once the milk reaches a boil, reduce the heat and let it simmer for about 10 minutes until it thickens slightly.
  4. Add the grated jaggery and saffron strands to the milk, stirring until the jaggery completely dissolves.
  5. Add the flattened rice (chura) and cardamom powder to the milk mixture, stirring well to combine.
  6. Cook for an additional 5 minutes on low heat, allowing the chura to absorb the milk.
  7. Remove from heat and let it cool for a few minutes before serving in bowls, topped with the sautéed nuts and raisins.
