Ingredients
- Flattened rice (chura) - 100 grams
- Full-fat milk - 500 ml
- Jaggery - 50 grams (grated)
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (almonds and cashews) - 2 tablespoons
- Raisins - 1 tablespoon
- Ghee - 1 tablespoon
- Saffron strands - a pinch
Steps
- In a pan, heat the ghee on low flame, then add the chopped nuts and raisins, sautéing until golden. Remove from the pan and set aside.
- In the same pan, add the full-fat milk and bring it to a boil, stirring occasionally.
- Once the milk reaches a boil, reduce the heat and let it simmer for about 10 minutes until it thickens slightly.
- Add the grated jaggery and saffron strands to the milk, stirring until the jaggery completely dissolves.
- Add the flattened rice (chura) and cardamom powder to the milk mixture, stirring well to combine.
- Cook for an additional 5 minutes on low heat, allowing the chura to absorb the milk.
- Remove from heat and let it cool for a few minutes before serving in bowls, topped with the sautéed nuts and raisins.
