  • Okra (bhindi) - 200 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard oil - 2 tablespoons
  • Salt - to taste
  • Coriander leaves - for garnish

Steps

  1. Rinse the flattened rice in water for 1-2 minutes, then drain and set aside to soften.
  2. Wash the okra, pat dry, and slice them into 1-inch pieces.
  3. Heat mustard oil in a pan over medium heat. Once hot, add cumin seeds and let them splutter.
  4. Add the chopped onion and sauté until translucent.
  5. Stir in the grated ginger and slit green chili, cooking for another minute.
  6. Add the sliced okra, turmeric powder, and salt. Cook, stirring occasionally, until the okra is tender (about 5-7 minutes).
  7. Gently fold in the softened flattened rice, mixing well to combine all the ingredients.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  9. Remove from heat and garnish with chopped coriander leaves before serving.
