- Onion - 1 medium, finely chopped
- Green chilies - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Salt - 1 teaspoon (or to taste)
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Fresh coriander leaves - a handful, chopped for garnish
Steps
- Start by roasting the eggplant directly over an open flame or in an oven until the skin is charred and the flesh is soft (about 10-15 minutes).
- Once roasted, let the eggplant cool, then peel off the charred skin and mash the flesh in a bowl.
- In a pan, heat the mustard oil over medium heat. Add the chopped onions and sauté until they turn translucent.
- Add the minced garlic, grated ginger, and green chilies to the pan, and sauté for another 2 minutes until fragrant.
- Stir in the mashed eggplant, salt, coriander powder, cumin powder, and turmeric powder. Cook for 5-7 minutes, stirring occasionally to combine the flavors.
- Meanwhile, rinse the flattened rice in water for a few seconds and drain. Let it sit for 5 minutes to soften.
- Once the bharta is ready, mix the softened chura into the eggplant mixture and combine well.
- Garnish with fresh coriander leaves before serving.
