- Flattened rice (chura) - 100 grams
- Potatoes - 300 grams
- Mustard oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Green chilies - 2, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Wash and peel the potatoes, then boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
- While the potatoes are boiling, wash the flattened rice under cold water and soak it in warm water for about 5 minutes. Drain and set aside.
- In a pan, heat 1 tablespoon of mustard oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the minced garlic, grated ginger, and chopped green chilies to the pan. Sauté for another 2-3 minutes until fragrant.
- Peel the boiled potatoes and mash them in a bowl. Add the sautéed mixture, coriander powder, cumin powder, turmeric powder, and salt. Mix well to combine.
- In the same pan, add the soaked flattened rice and the remaining tablespoon of mustard oil. Stir-fry for about 2-3 minutes until it becomes slightly crisp.
- Combine the crispy flattened rice with the spiced mashed potatoes and mix gently until well combined.
- Garnish with fresh coriander leaves before serving.
