Ingredients

  • Flattened rice (chura) - 100 grams
  • Potatoes - 300 grams
  • Mustard oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Green chilies - 2, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Wash and peel the potatoes, then boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
  2. While the potatoes are boiling, wash the flattened rice under cold water and soak it in warm water for about 5 minutes. Drain and set aside.
  3. In a pan, heat 1 tablespoon of mustard oil over medium heat. Add the chopped onions and sauté until translucent.
  4. Add the minced garlic, grated ginger, and chopped green chilies to the pan. Sauté for another 2-3 minutes until fragrant.
  5. Peel the boiled potatoes and mash them in a bowl. Add the sautéed mixture, coriander powder, cumin powder, turmeric powder, and salt. Mix well to combine.
  6. In the same pan, add the soaked flattened rice and the remaining tablespoon of mustard oil. Stir-fry for about 2-3 minutes until it becomes slightly crisp.
  7. Combine the crispy flattened rice with the spiced mashed potatoes and mix gently until well combined.
  8. Garnish with fresh coriander leaves before serving.
