- Mutton or goat meat - 250 grams, cut into small pieces
- Flattened rice (chura) - 100 grams
- Onion - 1 medium, finely sliced
- Ginger-garlic paste - 1 tablespoon
- Green chilies - 2, slit
- Tomato - 1 medium, chopped
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - a handful, chopped
- Oil - 2 tablespoons
- Salt - to taste
- Water - 1 cup
Steps
- Heat oil in a pan over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and slit green chilies, cooking for another minute until the raw smell disappears.
- Incorporate the chopped tomatoes, salt, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes soften and oil separates from the mixture.
- Add the mutton pieces to the pan, stirring well to coat them with the spice mixture. Cook on medium heat for about 5 minutes.
- Pour in the water, cover the pan, and let it simmer on low heat for 30 minutes or until the mutton is tender, stirring occasionally.
- Once the mutton is cooked, sprinkle garam masala and chopped coriander leaves, mixing well.
- In a separate bowl, rinse the flattened rice (chura) under running water, then drain and set aside.
- To serve, take a portion of chura, top it with the bhuna gosht, and garnish with additional coriander leaves.
