Ingredients

  • Mutton or goat meat - 250 grams, cut into small pieces
  • Flattened rice (chura) - 100 grams
  • Onion - 1 medium, finely sliced
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, slit
  • Tomato - 1 medium, chopped
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh coriander leaves - a handful, chopped
  • Oil - 2 tablespoons
  • Salt - to taste
  • Water - 1 cup

Steps

  1. Heat oil in a pan over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
  2. Add the ginger-garlic paste and slit green chilies, cooking for another minute until the raw smell disappears.
  3. Incorporate the chopped tomatoes, salt, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes soften and oil separates from the mixture.
  4. Add the mutton pieces to the pan, stirring well to coat them with the spice mixture. Cook on medium heat for about 5 minutes.
  5. Pour in the water, cover the pan, and let it simmer on low heat for 30 minutes or until the mutton is tender, stirring occasionally.
  6. Once the mutton is cooked, sprinkle garam masala and chopped coriander leaves, mixing well.
  7. In a separate bowl, rinse the flattened rice (chura) under running water, then drain and set aside.
  8. To serve, take a portion of chura, top it with the bhuna gosht, and garnish with additional coriander leaves.
