Ingredients

  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Wash and dry the okra, then cut off the ends and slice them into thin pieces.
  2. In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the minced garlic, grated ginger, and green chili; sauté for another minute.
  5. Add the sliced okra and cook for about 5-7 minutes until they start to soften.
  6. Mix in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften.
  7. Once the okra is cooked through, add the flattened rice (Chura) and garam masala. Stir well to combine everything.
  8. Cook for an additional 3-4 minutes, allowing the flattened rice to warm up and absorb flavors.
  9. Garnish with fresh coriander leaves and serve hot.
