Ingredients

  • Okra - 200 grams
  • Flat rice (chura) - 100 grams
  • Mustard oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the okra thoroughly and pat them dry with a kitchen towel. Cut off the ends and slice them into thin rounds.
  2. In a pan, heat the mustard oil over medium heat. Once hot, add cumin seeds and let them splutter.
  3. Add the sliced okra to the pan and sauté for about 5-7 minutes until they are tender and slightly crispy.
  4. Sprinkle turmeric powder, red chili powder, and salt over the okra, mixing well to ensure even coating. Cook for another 2-3 minutes.
  5. Add the flattened rice (chura) to the pan and gently mix it with the okra, cooking for an additional 2-3 minutes until the chura is heated through.
  6. Remove from heat and garnish with fresh coriander leaves before serving.
