Steps
- Wash the okra thoroughly and pat them dry with a kitchen towel. Cut off the ends and slice them into thin rounds.
- In a pan, heat the mustard oil over medium heat. Once hot, add cumin seeds and let them splutter.
- Add the sliced okra to the pan and sauté for about 5-7 minutes until they are tender and slightly crispy.
- Sprinkle turmeric powder, red chili powder, and salt over the okra, mixing well to ensure even coating. Cook for another 2-3 minutes.
- Add the flattened rice (chura) to the pan and gently mix it with the okra, cooking for an additional 2-3 minutes until the chura is heated through.
- Remove from heat and garnish with fresh coriander leaves before serving.
