  • Cumin seeds - 1 teaspoon

  • Red chili powder - 1 teaspoon
  • Ginger - 1 inch (finely chopped)
  • Garlic - 2 cloves (finely chopped)
  • Onion - 1 medium (finely chopped)
  • Tomato - 1 medium (chopped)
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. If using fresh bamboo shoots, peel and slice them thinly; if using canned, rinse and drain them well.
  2. Heat mustard oil in a pan over medium heat. Once hot, add cumin seeds and let them splutter.
  3. Add finely chopped onions and sauté until they turn golden brown.
  4. Stir in the ginger and garlic, cooking for another minute until fragrant.
  5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil separates.
  6. Mix in the bamboo shoots and cook for 5-7 minutes, stirring occasionally.
  7. Add a splash of water if it looks too dry, then stir in the flattened rice (chura) and mix well.
