- Garlic - 2 cloves (finely chopped)

- Tomato - 1 medium (chopped)

Steps
- If using fresh bamboo shoots, peel and slice them thinly; if using canned, rinse and drain them well.
- Heat mustard oil in a pan over medium heat. Once hot, add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in the ginger and garlic, cooking for another minute until fragrant.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil separates.
- Mix in the bamboo shoots and cook for 5-7 minutes, stirring occasionally.
- Add a splash of water if it looks too dry, then stir in the flattened rice (chura) and mix well.
- Cover the pan and let it simmer for 5 minutes, allowing the flavors to meld.
