Steps
- In a bowl, soak the flattened rice (chura) in water for about 5 minutes, then drain and set aside.
- Heat 1 tablespoon of oil in a pan over medium heat, add cumin seeds, and let them sizzle.
- Add the chopped onions and sauté until they are translucent.
- Stir in the grated ginger and chopped green chilies, cooking for another minute.
- Add the turmeric powder and salt, mixing well.
- Crack the eggs into the pan and scramble them with the onion mixture until just set.
- Add the soaked and drained chura to the pan, mixing everything together gently.
- Cook for an additional 2-3 minutes, allowing the chura to crisp slightly.
- Remove from heat, stir in the chopped coriander leaves and lemon juice.
- Serve hot, garnished with extra coriander if desired.
