  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon (or to taste)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, soak the flattened rice (chura) in water for about 5 minutes, then drain and set aside.
  2. Heat 1 tablespoon of oil in a pan over medium heat, add cumin seeds, and let them sizzle.
  3. Add the chopped onions and sauté until they are translucent.
  4. Stir in the grated ginger and chopped green chilies, cooking for another minute.
  5. Add the turmeric powder and salt, mixing well.
  6. Crack the eggs into the pan and scramble them with the onion mixture until just set.
  7. Add the soaked and drained chura to the pan, mixing everything together gently.
  8. Cook for an additional 2-3 minutes, allowing the chura to crisp slightly.
  9. Remove from heat, stir in the chopped coriander leaves and lemon juice.
  10. Serve hot, garnished with extra coriander if desired.
