Ingredients

  • Flattened rice (chura) - 100 grams
  • Potato - 1 medium (approximately 150 grams), diced
  • Cauliflower - 100 grams, cut into small florets
  • Onion - 1 small, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Cilantro (coriander leaves) - 2 tablespoons, chopped
  • Oil - 2 tablespoons
  • Water - 1/2 cup

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and green chili. Sauté until the onions turn translucent.
  3. Stir in the grated ginger, followed by the diced potatoes. Sauté for about 5 minutes until the potatoes start to soften.
  4. Add the cauliflower florets, turmeric powder, red chili powder, and salt. Mix well and sauté for another 5 minutes.
  5. Pour in 1/2 cup of water, cover the pan, and let it simmer for about 10 minutes or until the vegetables are cooked through.
  6. While the vegetables are cooking, rinse the flattened rice under cold water to remove excess starch. Drain well.
  7. Once the vegetables are cooked, add the rinsed flattened rice to the pan. Mix gently to combine all ingredients.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  9. Remove from heat and garnish with chopped cilantro before serving.
