- Flattened rice (chura) - 100 grams
- Potato - 1 medium (approximately 150 grams), diced
- Cauliflower - 100 grams, cut into small florets
- Onion - 1 small, finely chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Cilantro (coriander leaves) - 2 tablespoons, chopped
- Oil - 2 tablespoons
- Water - 1/2 cup
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and green chili. Sauté until the onions turn translucent.
- Stir in the grated ginger, followed by the diced potatoes. Sauté for about 5 minutes until the potatoes start to soften.
- Add the cauliflower florets, turmeric powder, red chili powder, and salt. Mix well and sauté for another 5 minutes.
- Pour in 1/2 cup of water, cover the pan, and let it simmer for about 10 minutes or until the vegetables are cooked through.
- While the vegetables are cooking, rinse the flattened rice under cold water to remove excess starch. Drain well.
- Once the vegetables are cooked, add the rinsed flattened rice to the pan. Mix gently to combine all ingredients.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Remove from heat and garnish with chopped cilantro before serving.
