- Potatoes - 2 medium-sized (about 250 grams)
- Mustard oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Green chilies - 2, finely chopped
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - a handful, chopped
- Lemon juice - 1 tablespoon
Steps
- Wash and peel the potatoes, then cut them into small cubes.
- In a pot, boil the cubed potatoes in salted water until they are tender, about 10-12 minutes. Drain and set aside.
- In a pan, heat the mustard oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped green chilies and sauté for a minute until fragrant.
- Stir in the boiled potatoes, turmeric powder, and salt. Cook for about 5 minutes, stirring occasionally, until the potatoes are well coated with the spices.
- In a separate bowl, rinse the flattened rice under cold water for a few seconds until it softens. Drain and set aside.
- Add the softened chura to the spiced potato mixture and gently mix until well combined.
- Remove from heat, add chopped coriander leaves and lemon juice, and toss everything together.
- Serve hot as a midnight snack or light meal.
