Ingredients

  • Flattened rice (chura) - 100 grams
  • Potatoes - 2 medium-sized (about 250 grams)
  • Mustard oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Green chilies - 2, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - a handful, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Wash and peel the potatoes, then cut them into small cubes.
  2. In a pot, boil the cubed potatoes in salted water until they are tender, about 10-12 minutes. Drain and set aside.
  3. In a pan, heat the mustard oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  4. Add the chopped green chilies and sauté for a minute until fragrant.
  5. Stir in the boiled potatoes, turmeric powder, and salt. Cook for about 5 minutes, stirring occasionally, until the potatoes are well coated with the spices.
  6. In a separate bowl, rinse the flattened rice under cold water for a few seconds until it softens. Drain and set aside.
  7. Add the softened chura to the spiced potato mixture and gently mix until well combined.
  8. Remove from heat, add chopped coriander leaves and lemon juice, and toss everything together.
  9. Serve hot as a midnight snack or light meal.
