- Green chili - 1, slit
- Cucumber - 1 small, diced
- Carrot - 1 small, grated
- Peas - 50 grams (fresh or frozen)
- Coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Mustard oil - 1 tablespoon
- Salt - to taste
- Turmeric powder - 1/4 teaspoon
- Cumin seeds - 1/2 teaspoon
Steps
- Rinse the flattened rice (Chura) under cold water in a sieve until it is clean and soften for about 5 minutes. Drain and set aside.
- In a pan, heat mustard oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and green chili to the pan, sautéing until the onions turn translucent.
- Stir in the chopped tomato and grated carrot, cooking for about 3-4 minutes until the tomato softens.
- Add turmeric powder, salt, and peas to the pan, cooking for another 2-3 minutes until the peas are tender.
- In a large mixing bowl, combine the softened Chura, sautéed vegetable mixture, diced cucumber, and chopped coriander leaves.
- Drizzle with lemon juice and toss everything together gently until well mixed.
- Serve immediately, garnished with extra coriander if desired.
