Ingredients

  • Flattened rice (Chura) - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Cucumber - 1 small, diced
  • Carrot - 1 small, grated
  • Peas - 50 grams (fresh or frozen)
  • Coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Mustard oil - 1 tablespoon
  • Salt - to taste
  • Turmeric powder - 1/4 teaspoon
  • Cumin seeds - 1/2 teaspoon

Steps

  1. Rinse the flattened rice (Chura) under cold water in a sieve until it is clean and soften for about 5 minutes. Drain and set aside.
  2. In a pan, heat mustard oil over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and green chili to the pan, sautéing until the onions turn translucent.
  4. Stir in the chopped tomato and grated carrot, cooking for about 3-4 minutes until the tomato softens.
  5. Add turmeric powder, salt, and peas to the pan, cooking for another 2-3 minutes until the peas are tender.
  6. In a large mixing bowl, combine the softened Chura, sautéed vegetable mixture, diced cucumber, and chopped coriander leaves.
  7. Drizzle with lemon juice and toss everything together gently until well mixed.
  8. Serve immediately, garnished with extra coriander if desired.
