  • Red chili powder - 1 teaspoon

  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Fresh coriander leaves - for garnishing

Steps

  1. Wash the okra thoroughly and pat dry. Cut the okra into 1-inch pieces.
  2. Heat mustard oil in a pan over medium heat until it smokes slightly, then reduce the heat.
  3. Add cumin seeds to the oil and let them splutter.
  4. Add the sliced onions and sauté until they turn translucent.
  5. Stir in the minced garlic and slit green chili, cooking for another minute until fragrant.
  6. Add the okra pieces to the pan and toss to coat with the onion and spices.
  7. Sprinkle turmeric powder, red chili powder, and salt over the okra. Stir well.
  8. Cover the pan and cook for about 10-12 minutes, stirring occasionally, until the okra is tender.
  9. Remove the lid, add garam masala, and cook for an additional 2-3 minutes until the okra is slightly crispy.
  10. Garnish with fresh coriander leaves and serve hot.
