- Lamb or goat meat - 400 grams, cut into bite-sized pieces
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger paste - 1 tablespoon
- Garlic paste - 1 tablespoon
- Green chili - 1, slit
- Yogurt - 100 grams, beaten
- Garam masala - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Cooking oil - 3 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat the cooking oil in a heavy-bottomed pan over medium heat.
- Add the cumin seeds and let them splutter, then add the chopped onion and sauté until golden brown.
- Stir in the ginger and garlic paste, and cook for 2-3 minutes until the raw smell disappears.
- Add the meat pieces and sauté on high heat until they are browned on all sides.
- Incorporate the pureed tomato, green chili, coriander powder, turmeric powder, and red chili powder; mix well and cook for 5 minutes.
- Lower the heat and add the beaten yogurt gradually, stirring continuously to prevent curdling.
- Season with salt and cover the pan, allowing it to simmer on low heat for about 40 minutes, stirring occasionally.
- Once the meat is tender and the oil separates from the gravy, sprinkle garam masala and mix well.
- Garnish with fresh cilantro before serving.
