Ingredients

  • Lamb or goat meat - 400 grams, cut into bite-sized pieces
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Yogurt - 100 grams, beaten
  • Garam masala - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Cooking oil - 3 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat the cooking oil in a heavy-bottomed pan over medium heat.
  2. Add the cumin seeds and let them splutter, then add the chopped onion and sauté until golden brown.
  3. Stir in the ginger and garlic paste, and cook for 2-3 minutes until the raw smell disappears.
  4. Add the meat pieces and sauté on high heat until they are browned on all sides.
  5. Incorporate the pureed tomato, green chili, coriander powder, turmeric powder, and red chili powder; mix well and cook for 5 minutes.
  6. Lower the heat and add the beaten yogurt gradually, stirring continuously to prevent curdling.
  7. Season with salt and cover the pan, allowing it to simmer on low heat for about 40 minutes, stirring occasionally.
  8. Once the meat is tender and the oil separates from the gravy, sprinkle garam masala and mix well.
  9. Garnish with fresh cilantro before serving.
