Ingredients

  • Okra - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 1 tablespoon
  • Whole wheat flour - 1 cup
  • Water - as needed for dough
  • Fresh coriander - for garnish

Steps

  1. Wash and trim the okra, then cut it into small pieces.
  2. Heat cooking oil in a pan over medium heat. Add the chopped onions and sauté until they are translucent.
  3. Add the minced garlic, grated ginger, and green chili to the pan. Sauté for another minute until fragrant.
  4. Stir in the chopped tomatoes, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes soften.
  5. Add the okra to the pan, and stir-fry for about 7-10 minutes until the okra is cooked and tender. Sprinkle garam masala on top and mix well. Remove from heat and let it cool.
  6. In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Knead for a few minutes, then cover and let it rest for 10 minutes.
  7. Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten it slightly.
  8. Dust a rolling surface with flour and roll out each ball into a thin circle, about 6-7 inches in diameter.
  9. Heat a skillet or tawa over medium heat. Cook each roti for about 1-2 minutes on each side until golden brown, brushing lightly with oil if desired.
  10. Once the roti is cooked, place a portion of the bhindi masala in the center, fold the roti, and serve warm, garnished with fresh coriander.
