- Okra - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Cooking oil - 1 tablespoon
- Whole wheat flour - 1 cup
- Water - as needed for dough
- Fresh coriander - for garnish
Steps
- Wash and trim the okra, then cut it into small pieces.
- Heat cooking oil in a pan over medium heat. Add the chopped onions and sauté until they are translucent.
- Add the minced garlic, grated ginger, and green chili to the pan. Sauté for another minute until fragrant.
- Stir in the chopped tomatoes, turmeric powder, cumin powder, coriander powder, and salt. Cook until the tomatoes soften.
- Add the okra to the pan, and stir-fry for about 7-10 minutes until the okra is cooked and tender. Sprinkle garam masala on top and mix well. Remove from heat and let it cool.
- In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Knead for a few minutes, then cover and let it rest for 10 minutes.
- Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten it slightly.
- Dust a rolling surface with flour and roll out each ball into a thin circle, about 6-7 inches in diameter.
- Heat a skillet or tawa over medium heat. Cook each roti for about 1-2 minutes on each side until golden brown, brushing lightly with oil if desired.
- Once the roti is cooked, place a portion of the bhindi masala in the center, fold the roti, and serve warm, garnished with fresh coriander.
