- Basmati rice - 1 cup
- Okra (bhindi) - 200 grams, chopped
- Onion - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 teaspoon
- Green chili - 1, slit
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (vegetable or ghee) - 2 tablespoons
- Water - 2 cups
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until they are golden brown.
- Stir in the ginger-garlic paste and green chili, and cook for another minute until fragrant.
- Add the chopped okra and sauté for 5-7 minutes until they are tender and slightly browned.
- Mix in the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
- Add the soaked and drained rice to the pan. Gently mix to combine with the spices and okra.
- Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it cook for 15 minutes or until the rice is done and water is absorbed.
- Once cooked, fluff the pulao with a fork and sprinkle garam masala over it. Garnish with fresh coriander leaves before serving.
