Ingredients

  • Basmati rice - 1 cup
  • Okra (bhindi) - 200 grams, chopped
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, slit
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (vegetable or ghee) - 2 tablespoons
  • Water - 2 cups
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add the sliced onions and sauté until they are golden brown.
  4. Stir in the ginger-garlic paste and green chili, and cook for another minute until fragrant.
  5. Add the chopped okra and sauté for 5-7 minutes until they are tender and slightly browned.
  6. Mix in the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
  7. Add the soaked and drained rice to the pan. Gently mix to combine with the spices and okra.
  8. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it cook for 15 minutes or until the rice is done and water is absorbed.
  9. Once cooked, fluff the pulao with a fork and sprinkle garam masala over it. Garnish with fresh coriander leaves before serving.
