Ingredients

  • Okra - 250 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Wash the okra thoroughly, pat dry, and slice them into 1-inch pieces.
  2. Heat oil in a pan over medium heat, then add the chopped onions and sauté until they turn golden brown.
  3. Add the grated ginger, minced garlic, and slit green chili to the pan, and sauté for another minute until fragrant.
  4. Add the chopped tomato and cook until it becomes soft and mushy.
  5. Stir in the turmeric powder, coriander powder, cumin powder, and salt; cook for a couple of minutes to let the spices blend well.
  6. Add the sliced okra to the pan, mix gently, and cook on medium heat for about 10-15 minutes, stirring occasionally until the okra is tender and slightly crispy.
  7. Sprinkle the garam masala over the cooked okra, mix well, and cook for an additional 2 minutes.
  8. Garnish with chopped cilantro before serving.
