- Okra - 250 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Wash the okra thoroughly, pat dry, and slice them into 1-inch pieces.
- Heat oil in a pan over medium heat, then add the chopped onions and sauté until they turn golden brown.
- Add the grated ginger, minced garlic, and slit green chili to the pan, and sauté for another minute until fragrant.
- Add the chopped tomato and cook until it becomes soft and mushy.
- Stir in the turmeric powder, coriander powder, cumin powder, and salt; cook for a couple of minutes to let the spices blend well.
- Add the sliced okra to the pan, mix gently, and cook on medium heat for about 10-15 minutes, stirring occasionally until the okra is tender and slightly crispy.
- Sprinkle the garam masala over the cooked okra, mix well, and cook for an additional 2 minutes.
- Garnish with chopped cilantro before serving.
