Ingredients

  • Okra (Bhindi) - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, slit (optional)
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil - 2 tablespoons (preferably mustard or vegetable oil)
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Wash the okra thoroughly, pat dry, and chop them into 1-inch pieces.
  2. Heat oil in a pan over medium heat and add cumin seeds. Allow them to sizzle for a few seconds.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic, grated ginger, and green chili, and sauté for another minute until fragrant.
  5. Add the chopped tomatoes and cook until they soften and release their juices.
  6. Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2-3 minutes, stirring occasionally.
  7. Add the chopped okra to the pan and mix well to coat them with the spices.
  8. Cover the pan and cook on low heat for about 10-12 minutes, stirring occasionally, until the okra is cooked and tender.
  9. Sprinkle garam masala over the cooked okra and mix gently.
  10. Remove from heat, garnish with fresh cilantro, and serve hot with rice or roti.
