- Okra (Bhindi) - 200 grams

- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Green chili - 1, slit (optional)
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Oil - 2 tablespoons (preferably mustard or vegetable oil)
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- Wash the okra thoroughly, pat dry, and chop them into 1-inch pieces.
- Heat oil in a pan over medium heat and add cumin seeds. Allow them to sizzle for a few seconds.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the minced garlic, grated ginger, and green chili, and sauté for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften and release their juices.
- Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2-3 minutes, stirring occasionally.
- Add the chopped okra to the pan and mix well to coat them with the spices.
- Cover the pan and cook on low heat for about 10-12 minutes, stirring occasionally, until the okra is cooked and tender.
- Sprinkle garam masala over the cooked okra and mix gently.
- Remove from heat, garnish with fresh cilantro, and serve hot with rice or roti.
