Ingredients

  • Okra - 200 grams
  • Potato - 100 grams, boiled and mashed
  • Onion - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Green chili - 1, finely chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Chickpea flour (besan) - 2 tablespoons
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil - for shallow frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Wash and chop the okra into small pieces. Heat a tablespoon of oil in a pan and sauté the okra on medium heat until they are tender and slightly crispy. Allow them to cool.
  2. In a mixing bowl, combine the sautéed okra, boiled potato, chopped onion, ginger, garlic, green chili, cumin powder, coriander powder, turmeric powder, garam masala, salt, chickpea flour, and chopped coriander leaves. Mix well to form a dough-like consistency.
  3. Divide the mixture into two equal portions and shape them into burger patties.
  4. Heat oil in a skillet over medium heat. Once hot, place the patties in the skillet and cook for about 4-5 minutes on each side until golden brown and crispy.
  5. While the patties are cooking, toast the burger buns on a separate skillet until lightly browned.
  6. Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, placing a lettuce leaf, followed by the cooked bhindi masala patty, slices of tomato, and cucumber. Top with the other half of the bun.
  7. Serve immediately with your favorite chutney or sauce.
