- Okra (Bhindi) - 250 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Wash the okra thoroughly, pat dry, and trim the ends. Cut into 1-inch pieces.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in the ginger, garlic, and green chili, cooking for another minute.
- Add the chopped tomatoes and cook until they soften and the oil starts to separate.
- Sprinkle in the turmeric, coriander powder, and salt, stirring well to combine.
- Add the okra pieces to the pan, gently mixing to coat them with the spices.
- Cover and cook on low heat for about 10-12 minutes, stirring occasionally, until the okra is tender.
- Once cooked, sprinkle garam masala over the bhindi and mix well.
- Garnish with fresh coriander leaves and serve hot.
