Ingredients

  • Okra (Bhindi) - 250 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the okra thoroughly, pat dry, and trim the ends. Cut into 1-inch pieces.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Stir in the ginger, garlic, and green chili, cooking for another minute.
  5. Add the chopped tomatoes and cook until they soften and the oil starts to separate.
  6. Sprinkle in the turmeric, coriander powder, and salt, stirring well to combine.
  7. Add the okra pieces to the pan, gently mixing to coat them with the spices.
  8. Cover and cook on low heat for about 10-12 minutes, stirring occasionally, until the okra is tender.
  9. Once cooked, sprinkle garam masala over the bhindi and mix well.
  10. Garnish with fresh coriander leaves and serve hot.
