Ingredients

  • Okra - 250 grams, trimmed and cut into 2 cm pieces
  • Onion - 2 medium, sliced
  • Tomato - 1 medium, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander - for garnish

Steps

  1. Heat oil in a pan over medium heat and add cumin seeds. Let them splutter.
  2. Add sliced onions and sauté until they turn golden brown.
  3. Stir in the grated ginger, minced garlic, and slit green chili. Cook for another minute until fragrant.
  4. Add the chopped tomato and cook until it softens and mixes well with the onions.
  5. Sprinkle in the turmeric powder, red chili powder, and salt. Mix well.
  6. Add the okra pieces and stir to coat them with the spices. Cover the pan and cook for about 10 minutes, stirring occasionally.
  7. Once the okra is tender, uncover and add garam masala. Stir well and cook for another 5 minutes until the okra is fully cooked and slightly crispy.
  8. Garnish with fresh coriander and serve hot with roti or rice.
