- Okra - 250 grams, trimmed and cut into 2 cm pieces
- Onion - 2 medium, sliced
- Tomato - 1 medium, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander - for garnish
Steps
- Heat oil in a pan over medium heat and add cumin seeds. Let them splutter.
- Add sliced onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili. Cook for another minute until fragrant.
- Add the chopped tomato and cook until it softens and mixes well with the onions.
- Sprinkle in the turmeric powder, red chili powder, and salt. Mix well.
- Add the okra pieces and stir to coat them with the spices. Cover the pan and cook for about 10 minutes, stirring occasionally.
- Once the okra is tender, uncover and add garam masala. Stir well and cook for another 5 minutes until the okra is fully cooked and slightly crispy.
- Garnish with fresh coriander and serve hot with roti or rice.
