  • Bhindi (okra) - 250 grams

  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the bhindi (okra) thoroughly, trim the edges, and cut them into 1-inch pieces.
  2. Heat oil in a pan over medium heat, add cumin seeds and let them splutter.
  3. Add the finely chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic, grated ginger, and slit green chili, cooking for another minute until fragrant.
  5. Add the chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften.
  6. Add the bhindi pieces to the pan, mix well, and cover to cook for about 10-12 minutes, stirring occasionally to prevent sticking.
  7. Once the bhindi is tender, remove the lid and cook for an additional 2-3 minutes to reduce any moisture.
  8. Garnish with freshly chopped coriander leaves and serve hot with roti or rice.
