Ingredients
- Besan (gram flour) - 100 grams
- Semolina (rava) - 50 grams
- Yogurt (unsweetened) - 50 grams
- Water - 100 ml
- Turmeric powder - 1/2 teaspoon
- Eno fruit salt - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Oil - 1 tablespoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - 5 leaves
- Green chili (finely chopped) - 1
- Coriander leaves (chopped) - 2 tablespoons
- Pomegranate seeds - 2 tablespoons
- Sev (crunchy chickpea noodles) - 2 tablespoons
- Chutney (green and tamarind) - as required
Steps
- In a bowl, mix besan, semolina, yogurt, water, turmeric powder, and salt to form a smooth batter. Let it rest for 10 minutes.
- After resting, add Eno fruit salt to the batter and mix gently until it becomes frothy.
- Grease a steaming tray or dish with oil and pour the batter into it, spreading it evenly.
- Steam the batter in a steamer or a large pot with boiling water for about 15-20 minutes, or until a toothpick inserted comes out clean.
- Once steamed, remove the dhokla and let it cool slightly. Cut it into square or diamond-shaped pieces.
- In a small pan, heat oil and add mustard seeds and curry leaves. Allow them to splutter.
- Pour the tempering over the steamed dhokla pieces, then garnish with chopped green chili, coriander leaves, and pomegranate seeds.
- Before serving, top with green and tamarind chutneys and a generous sprinkle of sev.
