Ingredients

  • Basmati rice - 1 cup
  • Chicken (boneless, cut into cubes) - 250 grams
  • Onion (thinly sliced) - 1 large
  • Tomato (chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies (slit) - 2
  • Plain yogurt - 1/4 cup
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Cilantro (chopped) - 2 tablespoons
  • Mint leaves (chopped) - 2 tablespoons
  • Ghee or cooking oil - 2 tablespoons
  • Salt - to taste
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat ghee or oil over medium heat, add sliced onions, and sauté until golden brown.
  3. Add ginger-garlic paste and green chilies to the pot, cooking for another 2 minutes until fragrant.
  4. Stir in the chicken cubes and cook until they are no longer pink, about 5-7 minutes.
  5. Add chopped tomatoes, turmeric powder, biryani masala, and salt to taste, cooking until the tomatoes are softened.
  6. Lower the heat, mix in the yogurt, cilantro, and mint leaves, and let it simmer for about 5 minutes.
  7. In a separate pot, bring 2 cups of water to a boil, then add the soaked and drained basmati rice. Cook for about 5-7 minutes until the rice is 70% cooked, then drain.
  8. Layer the partially cooked rice over the chicken mixture in the pot, cover, and cook on low heat for about 15-20 minutes, allowing the flavors to meld.
  9. Remove from heat, let it rest for 5 minutes, then gently fluff the biryani with a fork before serving.
