- Ginger-garlic paste - 1 tablespoon
- Green chilies (slit) - 2
- Plain yogurt - 1/4 cup
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Ghee or cooking oil - 2 tablespoons
- Salt - to taste
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat ghee or oil over medium heat, add sliced onions, and sauté until golden brown.
- Add ginger-garlic paste and green chilies to the pot, cooking for another 2 minutes until fragrant.
- Stir in the chicken cubes and cook until they are no longer pink, about 5-7 minutes.
- Add chopped tomatoes, turmeric powder, biryani masala, and salt to taste, cooking until the tomatoes are softened.
- Lower the heat, mix in the yogurt, cilantro, and mint leaves, and let it simmer for about 5 minutes.
- In a separate pot, bring 2 cups of water to a boil, then add the soaked and drained basmati rice. Cook for about 5-7 minutes until the rice is 70% cooked, then drain.
- Layer the partially cooked rice over the chicken mixture in the pot, cover, and cook on low heat for about 15-20 minutes, allowing the flavors to meld.
- Remove from heat, let it rest for 5 minutes, then gently fluff the biryani with a fork before serving.
