Bhatia Khichdi

Ingredients
- Basmati rice - 100 grams
- Moong dal (split yellow lentils) - 50 grams
- Ghee - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger (grated) - 1 teaspoon
- Green chili (slit) - 1
- Carrot (chopped) - 1 small
- Peas - 50 grams
- Water - 600 milliliters
- Salt - to taste
- Fresh coriander (chopped) - for garnish
Steps
- Rinse the basmati rice and moong dal separately under running water until the water runs clear, then soak them together in water for 15 minutes.
- In a large pot or pressure cooker, heat the ghee over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add grated ginger and green chili, sauté for a minute until fragrant.
- Stir in the chopped carrot and peas, cooking for another 2-3 minutes until they soften.
- Drain the soaked rice and dal, then add them to the pot along with turmeric powder and salt.
- Pour in 600 milliliters of water, stir well, and bring to a boil. If using a pressure cooker, cover and cook for 3 whistles. If using a pot, cover and simmer on low heat for about 15-20 minutes until the rice and dal are cooked and water is absorbed.
- Once done, remove from heat and let it sit for 5 minutes before fluffing with a fork.
- Garnish with fresh coriander and serve hot.
