Bhatia Khichdi

Ingredients

  • Basmati rice - 100 grams
  • Moong dal (split yellow lentils) - 50 grams
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Green chili (slit) - 1
  • Carrot (chopped) - 1 small
  • Peas - 50 grams
  • Water - 600 milliliters
  • Salt - to taste
  • Fresh coriander (chopped) - for garnish

Steps

  1. Rinse the basmati rice and moong dal separately under running water until the water runs clear, then soak them together in water for 15 minutes.
  2. In a large pot or pressure cooker, heat the ghee over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  3. Add grated ginger and green chili, sauté for a minute until fragrant.
  4. Stir in the chopped carrot and peas, cooking for another 2-3 minutes until they soften.
  5. Drain the soaked rice and dal, then add them to the pot along with turmeric powder and salt.
  6. Pour in 600 milliliters of water, stir well, and bring to a boil. If using a pressure cooker, cover and cook for 3 whistles. If using a pot, cover and simmer on low heat for about 15-20 minutes until the rice and dal are cooked and water is absorbed.
  7. Once done, remove from heat and let it sit for 5 minutes before fluffing with a fork.
  8. Garnish with fresh coriander and serve hot.
