Ingredients
- Basmati rice - 200 grams
- Chicken (bone-in, skinless) - 300 grams
- Onion - 1 large, thinly sliced
- Tomato - 1 medium, chopped
- Yogurt - 100 grams
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Whole spices (bay leaf, cinnamon stick, cardamom pods, cloves) - 1 each
- Cooking oil - 3 tablespoons
- Salt - to taste
- Water - 500 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- In a large bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, red chili powder, and salt. Let it sit for at least 20 minutes.
- Heat the cooking oil in a heavy-bottomed pot over medium heat. Add the whole spices and sauté for a minute until fragrant.
- Add the sliced onions and sauté until they turn golden brown. Reserve some for garnishing later.
- Stir in the chopped tomatoes and cook until they soften. Then add the marinated chicken and cook until the chicken is browned and cooked through, about 10 minutes.
- Add the chopped cilantro and mint leaves to the chicken mixture, stir well, and remove from heat.
- In a separate pot, bring 500 ml of water to a boil. Add the soaked rice and cook until it's about 70% done, then drain the rice.
- Layer the partially cooked rice over the chicken mixture in the pot. Cover tightly with a lid and cook on low heat for 20 minutes to allow the flavors to meld.
- Once done, gently fluff the biryani with a fork, garnish with reserved fried onions, and serve hot.
