Ingredients

  • Basmati rice - 200 grams
  • Chicken (bone-in, skinless) - 300 grams
  • Onion - 1 large, thinly sliced
  • Tomato - 1 medium, chopped
  • Yogurt - 100 grams
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Whole spices (bay leaf, cinnamon stick, cardamom pods, cloves) - 1 each
  • Cooking oil - 3 tablespoons
  • Salt - to taste
  • Water - 500 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. In a large bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, red chili powder, and salt. Let it sit for at least 20 minutes.
  3. Heat the cooking oil in a heavy-bottomed pot over medium heat. Add the whole spices and sauté for a minute until fragrant.
  4. Add the sliced onions and sauté until they turn golden brown. Reserve some for garnishing later.
  5. Stir in the chopped tomatoes and cook until they soften. Then add the marinated chicken and cook until the chicken is browned and cooked through, about 10 minutes.
  6. Add the chopped cilantro and mint leaves to the chicken mixture, stir well, and remove from heat.
  7. In a separate pot, bring 500 ml of water to a boil. Add the soaked rice and cook until it's about 70% done, then drain the rice.
  8. Layer the partially cooked rice over the chicken mixture in the pot. Cover tightly with a lid and cook on low heat for 20 minutes to allow the flavors to meld.
  9. Once done, gently fluff the biryani with a fork, garnish with reserved fried onions, and serve hot.
